I’m applying for a long-term student visa in Italy. My program is 105 days long, and I want to do some independent travel after. I was wondering if it’s okay for me to put the leaving date in the application as 10 days after the program officially ends.

I’m not a US citizen nor have an EU passport.

10 days isn't much and isn't likely to raise eyebrows. It's entirely reasonable to give yourself a little time to pack up and leave or deal with unexpected delays. In many cases, I would expect the authorities to add such a grace period by themselves even if you don't request it.

On the other hand, the visa is issued for a specific purpose, I don't think you could ask for 3 more months or explicitly request that because you have some vacation plans. Italy will only consider the length of the programme (plus a reasonable grace period), not any random additional plan you may have.
