An alcohol is any organic compound in which the hydroxyl functional group (–OH) is bound to a saturated carbon atom. Alcohol originally referred to ethanol, the predominant alcohol in alcoholic beverages. Ethanol is the main alcohol produced by yeast, but methanol, propanols and butanols can also be produced in very small quantities, which is why we have to be careful when distilling as we can easily concentrate these flavorful alcohols to toxic levels.
