No Starting Hops - Do I need a 60 min boil?

I'm planning to brew a New England IPA where I only use knocked hops and dry hopping. Is there any point in boiling for an hour? What is the minimum time I should boil for? I'm thinking maybe 15 minutes.

DMS is pretty much a non issue these days, so a short boil is fine. I often do batches with a 20 min. mash and 20 min. boil The beer turns out fine, with no hint of DMS.

Certainly. The guys from Brülosophy do this with their "Short and Shoddy" series.

Make sure that you hit your OG almost before the boil, because you will not have much evaporation.


Get answers to practical, detailed questions

Focus on questions about an actual problem you have faced. Include details about what you have tried and exactly what you are trying to do.

Ask about...

  • the brewing process
  • brew appreciation

Not all questions work well in our format. Avoid questions that are primarily opinion-based, or that are likely to generate discussion rather than answers.

Questions that need improvement may be closed until someone fixes them.

Don't ask about...

  • Selling alcohol
  • Buying commercially brewed products
  • Irresponsible consumption of alcohol
  • Anything not directly related to homebrewing
  • Questions that are primarily opinion-based
  • Questions with too many possible answers or that would require an extremely long answer

vigor does help to expel and not condense and fall back in contrast to a simmering boil. However DMS has a Half-Life of 38 minutes at water boiling point. Time is a definite factor in removing it. - Evil Zymurgist Jun 18, 2018 at 19:16
