🐾 As we celebrate #WorldFoodSafetyDay, it's vital to focus on ensuring the safety of pet food. Bühler is committed to advancing food safety through the implementation of validated kill steps using extrusion technology. Here are the key facts to remember for validating low moisture pet food by our Global Food Safety Principal Edyta Margas: ✔ Identify Pathogens and Surrogates: Usually, Salmonella spp. is the main concern, with Enterococcus faecium as a common surrogate. Both need to be evaluated for each pet food product.   ✔ Inoculate Raw Material: It's best to inoculate dry raw materials instead of adding a liquid-based inoculum directly into the process.   ✔ Determine Needed Bacteria Reduction: Pasteurization in Europe requires a 5-log reduction, but the needed reduction depends on the specific risks from the raw materials, process, and product use.   ✔ Introduce and Recover Inoculated Material from the Extruder: The extrusion process is continuous and disruptive, requiring a large amount of inoculated material. Technical expertise is needed to minimize the amount of inoculated product.   ✔ Determine Processing Conditions (Worst-Case Scenario): The kill step depends on conditions like temperature, residence time, and pressure. Technical expertise is required to validate under these conditions.   ✔ Validate at Factory or Pilot Scale: Factory-scale validation avoids errors from extrapolation, while pilot-scale validation offers flexibility in handling inoculated material.   ✔ Prepare Validation Report: A skilled professional should prepare this report, which proves the process delivers safe pet food and serves as evidence for auditors.   ✔ Determine and Monitor Critical Control Points: Choose critical parameters based on validation results. Temperature at the last barrel or die is usually monitored. ✔ Monitor and Corrective Actions: Have procedures in place for handling under-processed products and use appropriate technology for continuous monitoring.   ✔ Implement Hygienic Zoning: Establish a high hygiene zone immediately after the kill step. Consider zoning for installation, cleaning, maintenance, utilities, and operation.
