I had never heard of mung bean before. Have you? But while reporting this story I learned it’s a high-protein legume that doesn’t require refrigeration, so it’s well-suited to climates with limited power. That’s 3.5 billion people globally. Mung bean is one of the main ingredients in Massachusetts’ newest High Time Foods plant-based protein that is revolutionizing what plant-based means across the country, plus vegetarian menus in restaurants and a few college campuses in the Commonwealth. It was created by Babson College alums Aakash Shah and Damian Felchlin who shared a deep concern about the global impact of food production, food waste and food insecurity. I’m excited to work with Edible Boston to highlight High Time Foods efforts to provide a source of nutrition in areas without a cold supply chain or access to groceries—including places in #Massachusetts and #NewEngland.
