Hmm… settings look fine, but even that screenshot is well washed-out - i.sstatic.net/H5Bey1Oy.png Do you have any of the 'fancy; display settings enabled - True Tone, auto-brightness, night shift etc?
This type of shot is one I'd be doing in full manual anyway. I've done very long exposure with my remote, but never tried in Auto, so i'm not really sure how I'd expect it to behave, tbh.
It would need Canon experts to know if such is available for that camera, but my Nikon walkabout lens is an 18-300mm. Saves having to think about what to carry ;)
It's not a direct comparison, but in audio recording we're now up to 32-bit floating point, which opens up the dynamic rage to 'mind-boggling' compared to any smaller bit-range. It uses a lot more data, but audio processing is considerably less intensive than picture, so it can now be done even in hand-held recorders. Noise floor is no longer directly linked to signal strength. To match this you do need better mics, with lower self-noise.
