🥚In 2020, the global production of eggs surpassed that of 2019 by 2.7%, reaching 116M tonnes. The forecast is to reach 138M tonnes by 2030. However, as we have been seeing, plant-based alternatives, especially in meat and dairy, have been growing a lot in the past years. Recently, egg alternatives have also been getting a lot of attention. It may have all started when Just Egg stepped into this territory, opening up a whole area to be explored. Many startups are now working on developing egg alternatives, whether it is for baking, fried egg simulation, scrambled egg substitutes, and much more. We have chosen a few of the startups that are revolutionizing the way we eat eggs.

Mr. Burns from the Simpsons would love precision fermentation... Why? Now entrepreneurs are betting that the next big thing in food technology will be animal-free dairy. • Startups have generated buzz by developing ingredients for ice cream, cream cheese, and pizza made through precision fermentation, in which engineers encode a cow's DNA into microorganisms that feed on a nutrient broth to produce proteins. • One challenge to the adoption of the new faux dairy products is cost. While estimates vary about the price premium for precision fermentation proteins, costs can range between parity and five times that of traditional dairy, depending on the consumer product. #business #startup #cow #idea

Fruits and vegetables, plus roots and tubers have the highest wastage rates of any food, according to FAO. Each week we will introduce one of the startups and tell more about their mission and goal in 5 years. 🌎This week Cano-ela: During her PhD in Food Processing Engineering at Wageningen University & Research, Juliana Romero Guzmán started looking into innovative ways to process canola seeds and in 2020 she started her own company: Cano-ela. “Oil is only 40% of the seed components. It is a pity that less than half of the seed is used for food purposes. Our aim is to contribute to a more circular economy, but also to a healthier world. When you enter our supermarkets, you may notice that pre-packed food is usually cheaper than loose food (this is not a typo), and there are good reasons for that. In this example, in an Australian supermarket, pre-packed zucchini costs $3.60 per kilogram, while loose zucchini costs $5.90 per kilogram—65% more—even though the pre-packed product includes a robust plastic mesh, a label, a seal, and more. Now we are on LinkedIn, a platform for professionals, so could you tell me how this could make sense? I know that many of my friends do not agree with the "carbon emission" concern, but we all agree that (1) this is a pure waste of limited resources, and (2) the price does not make sense. Actually, the price does make sense if you understand how the supply chain works. I expand on this more in my blog. My point is that we have a lot of work to do; rather than taking to the streets and blaming one another, we should focus our efforts on solving such problems. Joseph Oliver Yap & Shimroth John Thomas from ZeroTag one of the 12 participants in the third cohort of our Victorian AgTech Seeds program which is supporting the creation of early-stage AgTech startups by bringing together aspiring AgTech entrepreneurs and researchers creating technology for the Victorian agriculture sector and beyond. ZeroTag envision a world where eating food feeds the planet. Their mission is to save food from landfill by avoiding packaging waste. This is done with an interactive, dishwasher-safe sticker that can transform any container into smart packaging. ZeroTags are smart, playful labels for reusable packaging. When packaging is refilled, its identity needs to be updated. When this is done digitally, food can be tracked, enabling a seamless app that can help users buy smarter and avoid wasting food and money. ZeroTag can monetise this by charging brands access to valuable consumer insights with a non-linear subscription model. The interaction between users, groceries, smart packaging, and the pantry app allow for unique digital experiences that strengthen brands’ relationships with users and their peers. ZeroTag can also charge retailers every time the identity of smart packaging is updated because of the operational cost savings and efficiencies in their business. ZeroTag is currently running a pilot with partner retailers and Sustainability Victoria.
