🥑 It was a superfood-for-brain kinda day at #SDHK 2023. 🧠 I got to refresh my #DesignThinking chops and met lots of cool experts ranging from a mega hotel F&B staff trainer to an ex-architect-turned-farmer, all contributing their share to improve the essential food system that our basic survival depends on. 🚛 In #HongKong, we send 3,000+ tonnes of food waste to our landfills DAILY. Equivalent to each person in HK throwing away a bowl of rice plus a piece of steak 🍚🥩 Every. Day. 💸 Meanwhile ~15% of HK people are food insecure. Not to mention all the methane that will come out when the food rot in landfills. 🕸 This #SystemThinking workshop brought together stakeholders in an ecosystem to map out interdependent pain points that create waste, and brainstorm intervention ideas to change #HumanBehaviors and remove frictions. 🏪 #RealEstate x #FoodSystem: How we design/use our building/land hugely influences the efficiency of every step in our food system: from growing, storing, transporting, cooking, serving, eating, to disposing/recycling. Seasonal business A seasonal business is one that experiences fluctuations in demand or revenue based on the time of year. This business normally thrives during specific seasons, celebrations, or times of the year and may experience slower periods during other times. In the case of Malaysia, examples include lemang and ketupat businesses during Hari Raya (Eid) celebrations. Lemang is traditionally cooked by wrapping glutinous rice with coconut milk in banana leaves, then roasting it over an open fire until the rice is cooked and the banana leaves impart a natural flavour. While ketupat is made by packing rice into a woven palm leaf pouch and then boiling it until the rice is cooked and the pouch becomes compact. Both lemang and ketupat are popular Malaysian dishes, often served during festive occasions like Hari Raya, together with rendang, or serunding. Dim sum, a cherished tradition in Chinese culture, has undergone significant changes in recent years. The introduction of QR code ordering and modern approaches has brought convenience but has also reduced the personal touch and human interaction. As digital transformation continues, a key challenge is to preserve the traditional behaviours and spirit that make dim sum special. Unfortunately, traditional dim sum establishments like Lin Heung Tea House (蓮香樓) and Sun Hing Restaurant (新興食家) are becoming increasingly rare to find. The origins of dim sum can be traced back to the tea houses that emerged along the Silk Road trade route, connecting China with Central Asia and Europe. These tea houses initially served as resting places for weary travellers. As the popularity of dim sum grew, these establishments began offering bite-sized snacks alongside tea, providing nourishment and aiding digestion. Nowadays, in Hong Kong and many other cities, dim sum restaurants have adapted to modern dining habits by serving throughout the day and into the evening. For example, Hakkasan in Las Vegas offers a unique experience by serving dim sum from morning, accompanied by tea, until past midnight, with cocktails. Despite these changes, the essence of yum cha remains the same - the enjoyment of delicious food in the company of loved ones. Looking ahead to the future, it remains uncertain what lies ahead for dim sum culture. Will it continue to adapt and innovate while staying true to its roots? Only time will tell.
