Indeed, the canvas of tea is so rich and colourful, that chefs are fast discovering tea’s amazingly diversity & versatility, for pairing with food (its like they’ve discovered one whole extra shelf of flavours & spices !) Some classic combos : - China green tea (eg ‘Dragonwell’) with shrimp - Steaming Asssm chai with spicy samosas - Lapsang souchong with smoked duck - Darjeeling 2nd flush with Brie cheese - Earl grey with English scones …..one could go on🍃 At the end of the day, remember, there are no cast-iron rules.
