Every now and then you need someone else to cook for you, to bring you a nice drink, and to do the dishes for you afterwards… agreed? How lucky are we then, in Australia, to be surrounded by talented and ambitious people who often work ridiculously long hours and sometimes risk everything simply so they can provide you with such a wonderful service? Going out now and then to discover local establishments is delightful and so good for your soul isn’t it? When you find that perfect combination of fine dedicated professional service, great food, excellent wine selection, beer, spirit or cocktail choices all wrapped up in a beautifully maintained establishment with well thought out ambience, you have indeed hit the jackpot… Funnily enough, in order to make a restaurant, hotel or wine bar run as smoothly as clockwork, surprisingly it’s what you don’t see that makes for a world class and seemingly effortless dining experience, and that my friends is the true art of hospitality… You don’t see training. You don’t see hours of kitchen prep (mise en place) and dining room set up. You don’t see cobwebs. You don’t see crumpled menus. You don’t see tired or lazy wine lists. You don’t see coasters stuck under wobbly tables. You don’t see lunch crumbs on the dinner floor. You certainly don’t see sticky front door handles and you don’t see grumpy staff. You see a dedicated team living to create lasting warm fond memories that are truly embraced, by you, their guest, long after any price asked for is forgotten. That feeling of pure dining pleasure, and being looked after professionally, in a courteous manner, along with sharing precious moments with your chosen companions is indeed priceless. From wheels to meals: The famous Michelin stars used to rate restaurants were actually invented by a tyre company… Back in 1900, Michelin, the french company known for making car tyres, decided to create a travel guidebook for people driving in France. The two founders and brothers, André and Édouard Michelin, wanted encourage people to drive more so they could sell more tyres. This Michelin guidebook had valuable information such as maps, tyre repair tips, places for accommodation and restaurant recommendations. As the Michelin business grew, so did the guidebook. In 1920 dining became very popular and the brothers had already positive feedback about their restaurant tips in the guidebook. The brothers then decided to send a team of food inspectors to visit restaurants and rate them by a 3-category basis. One star meant "a very good restaurant in its category," two stars meant "excellent cuisine, worth a detour," and three stars meant "exceptional cuisine, worth a special journey.“ The same rating system is still in place today. By 1933, 23 restaurants in France were rated with three stars and were all included in the Michelin guidebook. The guidebook was extended to other European countries later. Today, the Michelin Guide is famous worldwide and helps food lovers find amazing places to eat. Some say, it is Bible of all dining guides. And earning a Michelin star is very honorable amongst cuisine chefs. 2024 will mark the 20 year anniversary of Dine Around and Stay in town. A tremendous collaboration between Destination Greater Victoria and BC Restaurant & Foodservices Association (BCRFA) Victoria Chapter. Dine Around provides tangible and measurable benefits in the off-peak season. (January each year) One of the critical role of Destination Organizations is to create platforms for our members. Many smart people who proceeded my tenure, and the tenure of my team, built the program in Victoria. Our smart decision was to keep the program, nurture it and in recent years increase investment in it to support emergence from the devasting effects of Covid-19 on our restaurant and hospitality communities.
