Essential Functions:           The Chef de Cuisine ensures proper execution in all kitchens and food production areas, with a primary focus on the Fine Dining Room. This involves daily tours to check food quality, kitchen cleanliness, staff appearance, and engagement with associates. They collaborate with the Sous Chef/Junior Sous Chef weekly and daily to plan for special events and support service as needed. Working with Restaurant Chefs/Sous Chefs, the Chef de Cuisine ensures menu execution and supports service, assisting with seasonal menu changes, including FOH and BOH training. They also coordinate with Conference Services and Sales departments to create special menus as needed, inspecting food quality to meet culinary team standards. In the Executive Chef's absence, the Chef de Cuisine oversees all kitchen operations and is responsible for the overall operation. They handle cost controls and menu planning with the Executive Chef, create the weekly schedule for all kitchen areas, approve day-off and PTO requests for hourly staff, and minimize overtime. Local candidates are preferred, with relocation support available if necessary.
