Food Cost Specialist

Summary Duties

The Food Cost Specialist will drive the implementation of R365 Operational Module within the VRG organization. This individual will ensure that the R365 ERP System and POS System are linked and communicate efficiently. The Food Cost Specialist will validate that all menu items are set up correctly in order to determine theoretical food costs and efficient menu development.

Essential Responsibilities

  • Ensure ERP System / Operational Module (Restaurant 365 or Similar) and POS systems (Micros or Similar) are properly linked and communicate correctly. Research and resolve any issues prior to period end and inventory posting
  • Ensuring accurate linking of all menu items and sales mix / category set up.
  • Ensure new menu inventory items are set-up correctly across all locations, including sales categories
  • Collaborating with business and technical members of the team to investigate and troubleshoot system and data errors when issues arise
  • Reconcile actual food cost vs theoretical and work with Operations, Accounting, and IT to reduce food cost
  • Maintain contracted rates for items per distributor
  • Reconcile actual vs contracted rates and summarize spend by product and vendor
  • Develop and teach proper usage of restaurant systems to restaurant managers in person and through video conferencing tools.
  • Part of project team to roll out new ERP modules (eg: Restaurant 365), including training and development of operations team as needed.
  • Work to be seen as a Subject Matter Expert Collaborate and with operations to reduce food costs percentage

Skills And Qualifications

  • Four–year college degree in Business Administration, Accounting, or Finance, preferred.
  • Minimal three (3) years experience in the restaurant industry.
  • Strong understanding of restaurant recipes and units of measures
  • Knowledgeable in ordering guides, product purchasing, and distributor contracts
  • Must have a strong understanding of restaurant operations, POS systems, Business Intelligence Tools, and Accounting/Inventory Management tools (Restaurant 365 a plus.
  • Strong interpersonal, teamwork, communication, and collaboration skills.
  • Comfortable with technology systems, able to understand and self-learn new systems quickly.
