Manages the accounting, analysis and reconciliation of food and beverage revenues. Ensures that all company service and operating standards are consistently met. Ensures compliance with federal, state, and local regulations.
Performs accounting and analysis relative to food and beverage operations.
Reviews and approves daily food and beverage revenue and related transaction journal entries and ensures that they are accurately recorded in appropriate books and records.
Establishes and maintains systems and procedures for the ordering, receiving, storing, transferring and inventorying of food, liquor and operating supplies.
Provides guidance and direction to unit-level operation personnel regarding cost controls, labor scheduling, periodic inventory data entry and POS system maintenance and updates.
Participated in menu planning, development and cost analysis.
Performs periodic testing of serving portions and related recipe specifications to ensure established costing standards are adhered to.
Maintains periodic operational audits to discover areas of weakness in controls and devises ways to reduce pilferage and increase efficiencies.
Coordinate monthly physical inventories to ensure accuracy and assist Accounting in preparing monthly inventory adjustment journal entries.
Monitors running food and liquor cost percentages and investigates variances between anticipated and actual labor costs.
Participates in forecasting and budgeting processes.
Performs all other duties as assigned.

Required Experience
Strong mathematical, data query, research and analytical skills required.
Excellent written and verbal communication skills.
Intermediate to advanced communication and Excel skills.
Associates Degree in accounting and hospitality management or related field - Bachelor's Preferred.
2-4 years experience working in a food and beverage, catering or hospitality environment.
Strong planning, time management and organizational skills.
Outgoing, confident and self-motivated personality. Strong Leadership skills.
Able to manage people and processes.
Must be available to work flexible hours, including some evenings and weekends.
Thorough knowledge of: Point-of-sale: Micros, Inventory Management: Eatec Solutions by Agilysys and Time and Attendance: Kronos.
