Sharing and appreciation are fundamental to a fulfilling existence. I know no greater joy than giving part of myself to another human being. I’ve always loved the hospitality business but I can’t say I’ve always known why. Over the past few years I have figured it out. I realized that my life’s work is to appreciate the blessings I have every moment and share them endlessly with as many people as possible.

That motivation is the driving passion behind every project I take on. It wouldn’t have been possible for me to be able to be where I am today without the help of so many extraordinary people. With this in mind I am offering the same assistance, guidance, and support to others.

Every year I will be taking on a couple of mentee’s and assisting them in their journey. I believe that a mentor should challenge a mentee by setting the stage for new ideas, because real development & achievement very rarely happens in a sterile and safe environment.

Guests enjoyed an authentic four-course Tuscan menu designed entirely around wine pairings from the legendary Antinori family’s historic estates. The cocktail hour featured an aperitivo of Montenisa Brut Rosé, followed by a seated dinner featuring paired wines to include: Castello della Sala Bramito del Cervo, Guado al Tasso Il Bruciato and the flagship Super-Tuscan Tignanello.

Cantinetta Antinori opened in the heart of Florence in 1957. Additional locations were added in Zurich and Vienna in 1997 and in Moscow in 2005. At each Cantinetta Antinori location, locals and visitors from around the world can experience the flavors of Tuscany. Craig Claiborne once noted in the New York Times Sunday Magazine, “The best meal we had in Italy was in a small restaurant in Florence, Cantinetta Antinori”. Terry Weeks, in Gourmet Magazine, said “a stylish atmosphere in which Florentine ladies often take a bit of lunch, not to mention wine aficionados from around the world.”

For our fourth pop up experience we created, The Thirst, an Underground Wine Society in collaboration with celebrity chef Todd English. The Thirst, was a roaming dinner and cocktail party centered on wine and cocktail culture. The mission was to promote wine, cocktails, sommeliers, mixologists, and the associated cuisines through gastronomic experiences in undisclosed yet remarkable locations. The Thirst’s debut experience, the “Inaugural Crush Wine Tasting & Dinner Party,” celebrates the harvest of Bordeaux and Burgundy, and features a 4 course Feast accompanied by 2 cocktail and 3 wine pairings. The multi-course dinner will incorporated decadent and luxurious ingredients paired with extraordinary wines and cognacs, complemented by live entertainment and on-site sommeliers. The menu, décor, and experience for inaugural Burgundy & Bordeaux Crush Wine Tasting & Dinner Party will be inspired by the historic French countryside. English took menu inspiration from the many harvest dinners he has attended in Europe and update them to his signature style utilizing locally sourced seasonal ingredients. Renowned French producers Latour and Tatone, as well as Tesseron Cognac, provided the wines & spirits for the experience. In addition to live entertainment, each producer had a sommelier on hand to educate the consumers on the wine pairings, and English was on hand to discuss the nuances and flavors of the dishes he chose.

SOAKED is a place where people can get fresh fruit infused cocktails and enjoy spiked fruit plates on SoHo’s coolest rooftop. SOAKED’s Beverage Director, Steve Olson, one of the world’s foremost spirits experts, developed SOAKED’s unique menu to feature market-fresh cocktails, and fruit-immersed in premium spirits. The resulting concept is a perfect marriage between the local juice bar and an upscale cocktail lounge. Menu offerings are categorized under headings that include Soaked, Infused, Muddled, Shaken, Brewed, Stirred, and Swizzled. SOAKED’s signature juiced cocktails combine cold pressed juices from Liquiteria, with premium spirits to yield creations like the Super Friends, made with Avion tequila, apple, pear, pineapple, wheatgrass and mint. Taking place in a 10,000 square foot rooftop penthouse on the Lower East Side of Manhattan, 2-star Michelin Chef Craig Hopson of Le Cirque created a different menu for each night, working around a specific seasonal ingredient, night one, lobster, night two, watermelon, night three, sweet corn, and night four, heirloom tomatoes. Every dish incorporated the "theme" ingredient of that evening and paired alongside a Grey Goose Flavors Cocktail that will also feature the same ingredient. The Pop Up was designed by H. DeVinn Bruce, by marrying the elements of fresh fruits and vibrant colors reminiscent of the Grey Goose Flavors with elements to invoke the feelings of Sirio Maccioni’s grandson’s downtown restaurant, “a true table in heaven where the next generation of Maccioni's would entertain the glitterati of the current era." Classic elements such as plates used in the original Le Cirque were utilized to pay homage to the original in this extraordinary space. This pop up was a once in a lifetime opportunity to take the quintessential New York restaurant and to be able to reinterpret their experience as a ‘pop up’. Sirio Maccioni and his family encompass the ideals of the we all strive to achieve as hospitality professionals. For the past 40 years Sirio was been the consummate host, creating special experiences for his patrons and friends.

CO-OP Food & Drink is a modern American brasserie and sushi bar serving globally inspired cuisine that is locally sourced and meant to be shared. By that we mean, sharing our authentic passion for food, drinks, hospitality, life, and the aspirations of the surrounding community. CO-OP makes dining a "creative exercise" by combining inventive American cuisine by Executive Chef John Keller (Le Bernardin, Nobu) with an authentic New York experience that indulges your soul, as much as your appetite. CO-OP pairs high quality interpretations of modern American cuisine with an extensive selection of sushi, sashimi, and other raw items overseen by sushi chef Stephen "Neo" Wong (Sushi of Gari, Megu). Drinks at CO-OP are just as much a culinary adventure as the food. Master Mixologist Julio Torres, visits local markets to source the best vegetables, fruits, and herbs to utilize in our seasonal cocktails and infusions. The wine list features solely American wines as a reflection of our locally sourced and sustainable philosophy.

CO-OP was designed by DeVinn Bruce (H. DeVinn Visual), and is inspired by California during the early 1970's intermingled with the gritty edge of the LES. The space features a photography installation by famed photographer EJ CAMP in the dining room of New York City icons such as Moby, Debbie Harry, Betsey Johnson, Patricia Field, and Jay McInerney.

After development & launch of CO-OP Food & Drink, we sold our interest in September of 2012 to the hotel operator.

The branding of our Pop Up Restaurants changed with our third pop up restaurant known as “The Feast.” This was due to the formation of the Guerrilla Culinary Brigade, our new company meant to oversee the further development of “Pop Up Restaurants.” The brigade is a group of foodies including, but not limited to, chefs, restaurateurs, and creative types that use underground culinary tactics along with extraordinary imagination, the element of surprise, and astonishing mobility to construct one-of-a-kind, memorable culinary and social moments.

In October of 2010 we opened our third pop up restaurant at the Hotel on Rivington. The Feast’s first Pop Up, was a Roaring 20’s: Speakeasy and Steakhouse,” with food by Chef Seamus Mullen. The menu and décor for “The Roaring 20’s: Speakeasy and Steakhouse” was a modern and seasonal interpretation of a 1920’s chophouse. We chose the Roaring 20’s because, “The 20’s spirit was marked by a breaking from traditional social, artistic, and cultural rules. This directly parallels with mission of the Guerilla Culinary Brigade and the inception of The Feast as we thrive off the same creative freedoms. Additionally, the 20’s had a extraordinary cocktail culture similar to modern Manhattan, which we will pay homage to with this concept.” Chef Seamus Mullen took menu inspiration from an original menu from the “21 Club” circa 1922, when it was a Speakeasy located in downtown Manhattan known as “The Red Head.” He updated the menu to reflect his style of cooking and influences, as well as seasonal ingredients. The décor and ambiance was created by H. Devinn Bruce to be simply elegant with elements from the Roaring 20’s art deco style. Entertainment included a live three-piece swing band and surprise live performances. The cocktail program for this edition of The Feast was helmed by Mixologist Ben Demarchelier.

The concept was an “al fresco” Argentinean BBQ with menu and preparations based on the Asado style of grilling popular in the Pampa region of South America, with a focus on grilled meats prepared on a parrilla style grill. We chose “Argentinean Asado” because the flavors are sophisticated and bold, but require a simple preparation that allows the locally sourced ingredients to shine. The simple and bold flavors of Asado grilling accompanied by freshly prepared Sangria or Argentine Malbec, were the perfect complement to summertime when this pop up took place. This amazing location and food experience supported the Hunger’s core mission of offering delicious and exciting new flavors and social experiences to New York’s young foodie community. The décor featured a 70 person communal table under the stars, a 20 by 10 foot photo installation, floating summer lanterns, and a 10 foot long open-air grill. The environment embraced the communal nature of Asado, allowing the beauty of the food and sharing of this “guerilla culinary” experience to remain the focus.

The core focus of The Hunger concept was to create memorable culinary and social moments that exist briefly and then disappear. The evenings were set up like a fabulous dinner party, where all guests sit at the same time and simultaneously share an evening. Like a dinner party, guests were encouraged to interact, leaving with only the memory of an experience that will never be exactly replicated again. A moment in time similar to the many great moments that take place every day in New York, and then fade out as quickly as they pop up.

The first iteration of the Hunger sold out in less than 2 hours and was supported by some amazing chefs and restaurateurs such as Tom Colicchio, Ken Friedman, and Todd English. Below are some press items on The Hunger:

In January 2006 we were contracted by the Borgata Hotel Casino & Spa in Atlantic City, NJ for consulting services related to a 200 million dollar phase 2 expansion of the properties master-plan development. This new area of the mega-casino included a nightclub named mur.mur, restaurants by Michael Mina, Wolfgang Puck, and Bobby Flay, multiple quick service concepts such as “Bread & Butter” & Fat Burger, and an expanded casino floor and poker room. Borgata was and still is the market leader within the region, featuring the only Las Vegas style experience on the East Coast and the only successful development in the region's recent history. Borgata successfully redefined the casino experience in Atlantic City and turned to us to do the same within the vibe-dining and nightlife sector. The primary nightlife offering in the Borgata’s Phase 1 was MIXX, although a financial success it was not effective in attracting the desired clientele. We were given the task of establishing the “Borgata Nightlife” sub-brand, re-positioning the MIXX outlet, establishing a premiere nightlife product (mur.mur), positioning & marketing the restaurants, and attracting a celebrity/influencer clientele; all with the goal of penetrating the desired demographics and gaining national recognition as “hip” & “trendy” destination.

The expansion project was launched July 4th Weekend in 2006, followed by the official launch of mur.mur nightclub the following weekend alongside the commencement of MIXX’s repositioning to an event driven EDM property. This was combined with the on-line launch of BORGATANIGHTLIFE.COM and the associated "Borgata Nightlife" brand which has become the main driver of traffic to all of the nightlife and day life outlets within the property.
