⚙️🔁 Rip Van Wafels Automation 🔁⚙️ Each of our large scale flow wrapping machines can portion package 14k Rip Van Wafels/hr. When we started selling #stroopwafels a decade ago, we were handpicking each wafel one by one. The process of filling, sealing and stickering each packet took 35 seconds/packet/person. That’s 100 wafels/hr. Large scale automation has improved efficiency by 140x as it just takes one person to monitor the packing equipment in action. 100/hr —> 14000/hr It’s amazing to see this state of the art #Italian packaging engineering at work. 🧑🍳⚙️Leos in Production ⚙️🧑🍳 Producing delicious & low sugar #sandwich #cookies is a multi-step #production flow with extremely fine processing parameters. 1. Dough The first step is creating the vegan & prebiotic fiber based cookie dough and depositing & molding it into our signature “Lion embroidered” cookie forms. 2. Baking The raw dough is baked in a convection oven & cooled on a slow conveyor. 3. Cream & Filling Depositing As the cookies are baked we mix a batch of the right textured vanilla cream filling and deposit the exact cream portion on a cookie. 4. Capping The topped cookie is then capped with a 2nd cookie, sandwiching the cream. 5. Cooling & Packing After the sandwich cookie is complete, there is a cooling process that crystallizes the filling and stabilizes the cookie, after which 4 Rip Van Leos are portioned flow wrapped and packed into boxes. It’s remarkable that automated baking technology has the ability to produce such a finally tuned treat. Our Rip Van Leos are produced on line that makes 30k+ cookies/hr in a baking facility that’s the size of a football field. Here is a little video glimpse of our Leos capped & ready to be cooled. 🍪🔁Rip Van Wafels v1 to v4🔁🍪 Our first product, Rip Van Wafels was a recreation of the #stroopwafel. This delicious caramel filled waffle cookie was first invented in a little medieval town called Gouda, The Netherlands in the 1800’s. Gouda is also famous for being the birth place of “Gouda Cheese”. Stroopwafels are amongst the most consumed cookies in the Netherlands and back in 2012 we saw a gap in the US market. We decided to reinvent this product and bring it to American consumers, much like how Chobani was inspired to Americanize mediterranean yogurt. Over the years, we made it our focus to become an impact driven company. We saw sugar as the major culprit in the sweet snack industry. 30%+ of all sugar consumed by #Americans is derived from #sweet #snacks and #deserts and the current mainstream sweet snacks out there are loaded with sugar and/or unhealthy synthetic ingredients. Over a 5 years span from 2015 to 2020 we incrementally reduced the sugar levels in our stroopwafels from 14 grams down to 3g. We did this by inventing a prebiotic fiber based cookie dough and #caramel syrup and retooling our production lines to handle these higher density and viscous components at scale. The development process was extremely difficult, with dozens of failed attempts and technical issues, but eventually we prevailed! To put things into perspective we reduced sugar by 11g or 2.5 teaspoons per stroopwafel. An 80% reduction compared to most of the major cookies available in the US all the while using clean ingredients and no #sugaralcohols. At Rip Van Kaizen is part of our business philosophy; to proactively & continuously become better. We apply kaizen to our products, systems, culture, individual contributions and company as whole. The way we put #kaizen into practice is by recording and internalizing our learnings. Learnings come from understanding the principle drivers that lead to outcomes. When we experience success, internalizing these learnings can be quite enjoyable, however in the face of failure, mistakes or extreme crisis, going through the excercise of examining these learnings can be quite painful. However, it is in these moments that the learnings are particularly important if properly internalized. Learnings from mistakes and failures allow us to prevent them in the future.
