More behind-the-scenes details from our recent install at Bourbon Steak - a Michael Mina Restaurant in NYC: The Essex House is a historic New York, New York City building, and installing full sized hoods under low ceilings was an expected challenge we faced. Instead of fabricating oversized items in our workshop, like their enormous stainless counters, we assembled and welded them all on-site!
