TO EAT THEIR VEGETABLES, THIS WEEK’S FARM TO FORK IS FOR YOU. I GO BACK TO SCHOOL TO LEARN FROM A CAFETERIA CHEF WHO IS GETTING STUDENTS TO EAT THOSE VEGGIES, AND NOT JUST BY DISGUISING THEM. THIS FARM TO FORK FRIDAY IS ESPECIALLY FOR PARENTS WHO HAVE A HARD TIME GETTING THEIR KIDS TO EAT VEGETABLES. I FOUND THE ONE PERSON WHO’S GOTTEN MY KIDS TO EAT VEGETABLES AND THAT IS CHEF DAVID CANNATA, THE HEAD CHEF AT CAPITAL CHRISTIAN, SOON TO BE DESTINY CHRISTIAN ACADEMY IN SACRAMENTO COUNTY. BECAUSE I DON’T KNOW ABOUT YOU. FOR ME, I’VE BEEN TRYING PRETTY KIND OF SUCCESSFULLY TO GET MY KIDS TO EAT VEGETABLES. IF IT’S NOT SALAD OR BROCCOLI, IT’S KIND OF HARD. SO WHAT’S YOUR SECRET TO GET KIDS TO EAT FARM FRESH VEGETABLES? WELL, WE MAKE VEGETABLES FUN. FOR ONE THING, SO TAKE AWAY THE NEGATIVE ASPECT OF VEGETABLES AND WE MAKE IT FUN AND DELICIOUS IN THEIR MEAL. AND WE DO IT IN SEVERAL DIFFERENT WAYS, WHETHER WE DO A CONTEST TO GET THEM TO VOTE ON THEIR FAVORITE STYLE OF VEGETABLE, WE COOK OR WE MAKE IT AND WE HIDE IT. YEAH, PAN FRY IT AND AND HIDE IT IN A MARIN YOU’RE HIDING THE VEGETABLES. BUT I ALSO KNOW YOU GET THEM TO EAT JUST PLAIN ROASTED VEGETABLES. OH, YES. I’VE WITNESSED THAT. EVEN I’M LIKE, YOU DON’T NEED MY ROASTED VEGETABLES. WHY DO WE CHUCK DAVID’S ROASTED VEGETABLES? YES. SO, SO SO SHOW US HOW YOU DO THAT. SO WE’LL WE THROW A LITTLE BIT OF GARLIC AND ONIONS IN. OKAY. GARLIC AND WHITE ONIONS. AND THEN WE HAVE PARSNIPS WITH MUSHROOMS, CARROTS. NO. THE KIDS ALL KNOW THIS IS IN THE MARINARA. SO YES. SO SO EVEN IF YOU HIDE IT IT’S PROBABLY BEST TO TELL THEM WHAT’S IN IT. THEY THEY LIKE THE TEXTURE. YEAH. SO IT DOESN’T HAVE THE BIG PIECES IN IT. THEY KNOW IT’S IN IT AND THEY LIKE IT THAT WAY. SO AND IT REALLY HAS A GREAT FLAVOR. IT SWEETENS UP WITH THE TOMATOES. AND THEN WHAT WE’LL DO IS WE HAVE OUR TOMATOES COOKING WITH OREGANO. AND WE’LL TAKE THESE. WE’LL DUMP THEM IN HERE OKAY. WE’LL PUT THAT OUT. WE’LL BRING IT OVER HERE OKAY. WE’LL TAKE THE BERM MIXER. AND WE WILL BERM MIX ALL THESE VEGETABLES INSIDE. AND THEN ONCE WE GET THEM ALL BLENDED UP NICELY, THEN WE HAVE FRESH SPINACH AND FRESH PARSLEY. LOVE THAT. WE’LL DUMP THAT IN TO FINISH. IT GIVES IT A NICE BRIGHT FRESHNESS WHEN WE’RE ALL DONE. AND THEN WE PLATE IT UP WE’LL PUT A LITTLE FRESH GARNISH RIGHT BACK ON TOP. ALL THOSE VEGETABLES ARE IN THAT. YES. WOW. SOME OF THE KIDS KNOW. SOME OF THE KIDS DON’T KNOW. I ALSO LIKE THE IDEA OF DOING SOMETHING FUN. AND YOU CAN DO THIS AT HOME. HE DOES A SWEET VERSUS SAVORY. SO YOU TAKE THE VEGETABLE, WHATEVER IT IS THAT YOU’RE TRYING TO GET THEM TO EAT, AND YOU DO TWO VERSIONS OF IT, RIGHT? WE DO. AND WHAT DID YOU DO HERE WITH THIS IS A CORN, UH, SALAD, CHILI LIME, CORN SALAD AND THEN THIS IS A SWEET CORN PUDDING. I LOVE THAT IDEA. KIND OF MAKING IT FUN FOR THE FAMILY. YOUR FAMILY COULD VOTE ON WHICH ONE THEY LIKED. AND IT’S FUN FOR THE KIDS. NOT TO GET THEM TO VOTE FOR THE SWEET VERSION EVERY TIME. AND. AND HONESTLY, TODAY THE KIDS REALLY WENT FOR THE THE CORN SALAD. TODAY, FRESH CORN IS REALLY GOOD. THAT’S SO FUN. I LOVE ALL THE CREATIVITY. ALL RIGHT CHEF DAVID THANK YOU SO MUCH AGAIN. GO TO THE FARMERS MARKET. GO TO THE GROCERY STORE. YOU GET YOURSELF SOME VEGGIES. MAYBE TRY THIS OUT TO GET YOUR KIDS TO EAT THEIR FIVE A DAY. THAT’S YOUR FARM TO FORK FRIDAY.
