This does not work because what is happening is the CONVERT function is generating a date in the format of 'MM/DD/YYYY' and then the FOR JSON AUTO, WITHOUT_ARRAY_WRAPPER adds the escape sequences to the slashes. I've tried applying the JSON_QUERY around the select statements but it does not help with the dates.
