This works perfectly. I'm not sure why this isn't upvoted. It accomplishes exactly what the OP needs, without having to set flags all over your code.

create code fences with backticks ` or tildes ~

like so

add language identifier to highlight code

put returns between paragraphs
for linebreak add 2 spaces at end

backtick escapes `like _so_`
quote by placing > at start of line
