    We'll call it some time during Kirk's historic five-year mission then! (I'm powering through TOS on blue-ray and noticed that in "Mudd's Women" they were worried about lithium crystals, and then in "The Alternative Factor" which occurs after they were worried about dilithium, but for the same reasons: maintaining orbit.) Your answer and the linked article does a good retcon of this.
