feat: Update OTEL deps

Pulls in a bunch of import-in-the-middle fixes: https://github.com/open-telemetry/opentelemetry-js/releases/tag/experimental%2Fv0.52.1

I also ran yarn deduplicate to clean up the yarn.lock after updating the deps. nvm had to revert this after I got esm issues 😭
