But it's true that physicists are more concerned with what they can measure than with what might be "true". They are just looking for the most simple mathematical models that are sufficient to predict the measurements. And if the measurements become weird (like there being no ether drift), new theories must be formulated and tested by measurement. The concrete objective universe may be out there, but we stick to what we can measure and to the models we fail to falsify.
