Proteins are becoming an even more important element for both nutrition and wellness for many consumers. More consumers than ever before are actively seeking food that are high in protein and in particular plant based. Proteins have many functions in our body and are essential in assisting with growth and repair, but also provide functional attributes in structure of the food in which we obtain these nutrients. We at Sunbloom Proteins GmbH, produce patented plant based, functional proteins and cold pressed oil from sunflower seeds. Sunbloom Protein is a alternative for replacing as well as complimenting existing plant or animal proteins where it serves mainly as a functional ingredient in food and beverage applications.

Thanks to all the project partners and the organization team for the last years. We achieved and learned a lot together, esp. regarding techno-functional properties of the various #plantbasedproteins!
Heute hat das Abschlusstreffen unseres ersten FuEuI-Projekts "Nachhaltige Proteinzutaten", das von Prof. Dr. Ute Weisz koordiniert wurde, stattgefunden. Im Rahmen des Treffens wurden die Arbeiten zur Entwicklung der Datenbank und der Messungen der Proteinzutaten vorgestellt, die Beiträge aus der Lebensmittelindustrie zur Anwendung von Proteinzutaten in der Produktentwicklung, die Arbeiten zur sensorischen Bewertung und die Ergebnisse zur Nachhaltigkeitsbewertung präsentiert. In den letzten drei Jahren wurden insgesamt 16.275 Messungen zu technofunktionellen Eigenschaften (z.B. Emulgierung, Schaumbildung, Proteinlöslichkeit), chemischer Zusammensetzung, Denaturierungstemperaturen, Molekulargewichtsverteilungen und zur Rheologie der 91 Proteinzutaten durchgeführt. Die einzigartig umfassende Datenbank enthält derzeit Such- und Recherchefunktionen sowie grafische Auswertungsmöglichkeiten und begleitende Tutorials. Um zukünftig auch eine internationale Nutzung zu ermöglichen, wurde die Datenbank in deutscher und englischer Sprache aufgesetzt. Die Datenbankarchitektur und die Benutzeroberfläche werden kontinuierlich angepasst und erweitert. Darüber hinaus wurden im Projekt mehr als 15 Abschlussarbeiten von Nachwuchswissenschaftlern durchgeführt und eine erste Publikation steht kurz vor der Veröffentlichung - weitere Publikationen werden folgen.
