Description
English: This photo was taken from Nargun Union in Thakurgaon District. Date molasses is an integral part of Bengali culture specially it is famous in rural area and it is used instead of sugar. Apart from its culinary uses, especially in making various types of sweets and desserts during the winter season, it holds a special significance. Typically, from November to February, workers collect syrup from date palm trees. They scrape the bark, attach a clay pot to collect the syrup, and let it sit overnight. Early next morning, the collected syrup is transferred to a large pot, where it is cooked over a low flame for two to three hours, with constant stirring using a sieve. As the molasses thickens, foam forms, which is skimmed off periodically by workers. Once the molasses reaches a certain consistency and cools down in clay pots, it is ready for sale in the market as per weight.
