About us

With a passion for great coffee, Andy and Jessie Wilkin founded Pilot Coffee Roasters under the name Te Aro Coffee Roasters in 2009. Located in Toronto’s Leslieville neighbourhood, the name was inspired from Andy’s upbringing in Te Aro - an area of downtown Wellington, New Zealand - and was built to establish our core values of sourcing ethical, Direct Trade coffee and building transparency in the process from farm to cup. Te Aro operated as a specialty cafe and micro roastery, supplying coffee, equipment, training, technical support and consulting services for new cafe owners across the city. Two years later, a second cafe was opened on the Ossington strip in Toronto’s west end, and by 2013 we rebranded to Pilot Coffee Roasters, moving roastery operations to our current headquarters at 50 Wagstaff Drive. Our dedication to quality, education and state-of-the-art facilities propelled us to earn 2014 Micro Roaster of the Year by Roast Magazine. With the international acclaim from the award and a growing presence in Toronto’s specialty coffee scene came new and exciting opportunities. More cafes were opened downtown, new Direct Trade partnerships were developed and a cold brew production department was introduced, quickly establishing Pilot Cold Brew™ as a leader in the category. Today Pilot Coffee Roasters is a full-service roastery, cold brewery, training provider and cafe operator with seven locations across Toronto and wholesale accounts from coast to coast. Our passion for great coffee and commitment to quality remains at the heart of everything we do.

    Honored to join our friends at PILOT COFFEE ROASTERS in celebrating their 15th anniversary! To mark the occasion, we collaborated to create the Pilot Coffee Dripper—a limited version of our ceramic coffee dripper. Custom-engraved with their logo, these special edition drippers were made to pair with Pilot Coffee’s limited anniversary coffee blend. It was a pleasure bringing this special project to life!     Rewind to May 2009: Andy, a freshly-minted Q Grader, and his partner Jessie open the doors to Te Aro Roasted in the heart of Leslieville. Working with a passionate and tight-knit team, this former car garage quickly transformed into a community hub for specialty coffee enthusiasts across Toronto. 15 years later, a lot can change. But their enduring qualities – including a passion for great coffee and working with great people – have carved the path to our growth and longevity. With great joy and gratitude we reflect on this journey, our team members, and customers who’ve made this milestone a reality. But we’re not just looking back. 2024 is a watershed moment for Pilot Coffee Roasters. An exciting new chapter where the foundation for the next 15 years will be formed.     Holiday Blend showcases our favourite seasonal flavours together in perfect harmony. It also draws attention to our longstanding partners, Red Door Family Shelter. Celebrating 40 years of service, they work in our Leslieville community for women and children affected by domestic abuse, families experiencing a housing crisis, and refugee claimants with nowhere else to turn.   For every 300g bag of Holiday Blend, $1 will be donated to Red Door's Food Bank Program. Visitors here receive fresh and staple foods, including culturally specific and special diet items. Last year there were 5,449 visitations. Our goal is to make this year's donation our largest to date! You can also support Red Door directly by visiting their website at reddoorshelter.ca/donate. Good coffee for a good cause.

    New cafe alert! Last week we opened our 11th specialty cafe in the heart of Midtown Toronto. Conveniently neighbouring St. Clair Station, our hope for this space is to provide a little calm before the commute. To pause at our standing bar for a moment of coffee bliss. To slow down and savour before inevitably speeding back up again. The reception has been so warm, and we couldn't be happier to join the Yonge + St. Clair BIA community. Open 7am to 8pm daily.
