My experience is, that slipping off the pedals is simply not a problem (unless you ride free handed). Especially the jolts and vibrations are not an issue because they are easily absorbed by your legs, especially via flexing of the heel. However, you need to have pedals that can transmit enough lateral forces to your shoes, so flat, hard plastic does not work well. However, sawtooth profiled hard rubber is definitely good enough.
