More than just a fish market.

About us

Home of Australia's Seafood, Sydney Fish Market (SFM) is the largest market of its kind in the Southern Hemisphere and the world's second largest seafood market in terms of variety outside of Japan. A working fish market, SFM sources' product both nationally and internationally and trades over 14,500 tonnes of seafood annually - with up to a hundred species of sustainable Australian seafood traded every day. SFM employs approximately fifty-seven staff to organise the weekday wholesale auction, promote Sydney Fish Market as the centre of seafood excellence and operate the Sydney Seafood School. Since opening in 1989, Sydney Seafood School has played an important part in persuading Sydney residents to eat more fish. The School is considered to be one of Australia’s leading cooking schools. Over 13,000 people come to classes each year. Visit the SSS pages for more information or to book a class. Onsite, SFM hosts six seafood retailers, a bottle shop, fruit and veg market, bakery, sushi bar, restaurants, gift shop and deli.

Not all activities being carried out on the new Sydney Fish Market site are above the water level… To create healthy marine habitats and thriving ecosystems, the project is installing rocky reef, to connect fish habitat around Blackwattle Bay; fish aggregation devices on the sea floor and hanging from the northern side of the structure; and seawall tiles on the basement wall, to turn flat surfaces into complex living habitats! Over 40 hanging devices installed on the underside of the northern face of the building will provide extra surface area for marine life to integrate into their habitat, fostering growth and thriving sea life in the bay while the new building emerges above the water. NAIDOC Week, held each July in Australia, celebrates the histories, cultures, and achievements of Aboriginal and Torres Strait Islander peoples. This year's NAIDOC Week theme, "Keep the Fire burning, Blak, Loud and Proud" highlights the unyielding spirit of Aboriginal and Torres Strait Islander communities, symbolised by fire representing their enduring strength and vitality. In recognition of this important celebration, we asked Yumbah Kangaroo Island Operations Manager, Shane (Sherb) Saunders, a proud Gunditjmara man, to reflect on what NAIDOC Week means to him: “I have worked for Yumbah for seven and half years, with the first seven years at the Narrawong Farm. After a short stint away, I am now back working at Yumbah as the Operations Manager at Yumbah Kangaroo Island. Aquaculture is a huge part of Gunditjmara Culture and has been practiced on Gunditjmara land at Lake Condah for thousands of years. Because of this it makes me proud to continue this profession on a national and international scale at Yumbah Aquaculture. NAIDOC week to me is a chance to reflect on the powerful Men and Women in my family and my culture, who have endured greatly but also achieved highly. It gives me the means to apply the same focus on myself, in the hopes, that one day I will inspire the same strength in future young people. I will be celebrating NAIDOC week by reaching out to family and going to the local NAIDOC week celebrations on Kangaroo Island." #NAIDOC #NAIDOCWEEK #NAIDOC2024

The new Sydney Fish Market is a unique and complex project. Since work began in 2020, the project has faced many challenges, including COVID-19 restrictions on construction, supply chain issues, labour shortages, inflation, record wet weather, as well the unfortunate collapse of a crane jib last year. The latest news is that the building is expected to be completed in 2025, at which point it will be handed over to us for operation. We can’t wait to receive the keys to this jewel in the crown of the Australian seafood industry, and will continue to keep our stakeholders updated on the progress of its construction. NAIDOC Week is the perfect time to acknowledge the fact that the tradition of seafood harvesting and eating is as old as our country itself. Indigenous Australians not only foraged for a range of species, but also developed sophisticated infrastructure such as traps, nets, and stone weirs to sustainably fish Australia's estuary systems. While commercial fishing methods have evolved significantly over the years, many consumers aren't aware of just how many Australian seafood species are still hand-harvested. From urchins to oysters, foraged seafood is responsibly sourced, diverse, and (most of all) delicious.  https://lnkd.in/gQeUggNQ

We love to see innovations like this being pioneered in the seafood industry. The more we can standardise quality assurance and labelling, the better (for the industry as well as the consumer)!

Exciting times at Blue Reef ! We're taking innovative steps to standardize the colors of live coral trout using the Pantone colour system. By creating a precise colour chart, we aim to set an industry benchmark for identifying red, pink, and green fish. This initiative enhances our internal processes and provides our customers with consistent, high-quality products. Special thanks to Craig Winkle from Seafood Directions for his invaluable technical support and to our dedicated team members which include Jock Collins, for their expertise and hard work. Proud to support the vibrant coral trout industry in Queensland and championing the efforts of small to medium-sized businesses. #BlueReef #CoralTrout #PantoneSystem #IndustryStandards #Queensland #SMB #InnovationInFishing #SustainableSeafood #ColorChart
